If I have two apple tv's on two different tv's, can each tv watch different shows?

Yes, if you have multiple Apple TVs, they operate completely independently of each other. One can stream a purchased movie from your iMac or PC while another streams a rented movie from the iTunes Store. A third Apple TV can simultaneously browse YouTube videos, and so on.
The only caveat when using multiple Apple TVs is that your internet connection has limited bandwidth that must be respected. If you have three Apple TVs, don't expect to be able to stream three different HD movie rentals from the iTunes Store; most basic internet plans have only enough bandwidth for a single HD stream, and you may need to upgrade to a premium, higher-bandwidth plan to support multiple HD streams.
