Does the new Macbook Pro Retina really have 4 times' desktop space, or it is 1440x900 in terms of coordinate just like the Retina iPad?
I mean if you can use up to 2880x1800, the desktop space is quadplex to original 1440x900, which is amazing but everything will be so small. Otherwise, if like a Retina iPad, the user space is actually 1440x900, that will be not that exciting. Sometimes we will need a really big desktop to view more for professional jobs.

In System Preferences you can select if you'd like more space. It allows you to take full advantage of the larger resolution display. UI elements are pixel doubled so that their not tiny but the resolution would be 2800 x 1800 or higher if you so desire.

No it doesn't let you select 2880x1800 as the screen resolution because everything will be too tiny at that resolution. Just like the iPad, the graphics will appear sharper, but doesn't show more on the screen.
