Can i add another processor later on, to a mac pro quad core?

It depends on your Mac Pro. If you have the 1,1 or 1,2 Mac Pro, I know for a fact these can be upgraded with off the shelf parts, I did it to my quad-core 1,1 Mac Pro with a pair of ULV (Ultra Low Voltage) Xeon 5300 series 2.33 GHz quad-core CPU's and now have 8 cores.

No. You can not add or change your Mac Pro's processor. You would have to replace the entire logic board.
