If I use an AirPort Express to "extend" the network created by the Time Capsule will the whole network now be "n" speed?

Not the entire network.... just the part where the express is servicing wireless clients (stations)
The Time Capsule (assuming it is 802.11ac time capsule) is backward compatible to 802.11n so they will talk, however there is one caveat. Imagine the extender s a single device (with all the wireless "inside of it" when that traffic is back hauled to time capsule it is using 802.11n. During that time the 802.11ac clients get a slight degraded experience. It will just be a little less airtime for them when the slower device talks. So that is the limitation, however when it is your turn to talk 802.11ac you communicate at your connection speed.
It will be a slight degradation, but 802.11n through apple is only 300Mbps. So that is the bottleneck of the "range extended traffic"
    on the time capsule
