Should I use the provided USB-C cable or the provided Thunderbolt 3 cable to connect my MacBook Pro 2018? Is there a difference?

Use the Thunderbolt 3 cable with the MacBook Pro. It will allow a 40 Gbps Thunderbolt connection. The USB-C cable will also work, but may limit you to 20 Gbps Thunderbolt. You should be able to get full capability (4K60 + USB 3) from a 20 Gbps Thunderbolt connection. But you will limit the speed of other Thunderbolt devices you connect to the LG UltraFine 4K and you can't chain a second 4K60 display. There is also a possibility that the USB-C cable might limit you to 4K60 + USB 2 with no Thunderbolt. Check for Thunderbolt connection and speed using About this Mac -> System Report -> Thunderbolt. The USB section of the System Report will tell you if the ports of the display are USB 3 or USB 2 capable.
