How do you view the iPad in Portrait mode when using the smart keyboard folio? I have numerous apps that can only be viewed ‘vertically’ and so far I can’t find a way to get the iPadPro 12.5 to work with the keyboard.

I am deciding if I should try the iPad Pro as a replacement for a laptop. However, I was wondering if I could easily access F1-F12 keys using the Smart Keyboard for casual use of Google Sheets, or other applications.
iOS doesn't have support for F keys, hence there are no F keys on the keyboard.

The folio and keyboard are not separable. The keyboard folio does not work when it is detached from the iPad.

No, you can only set one language through the Hardware Keyboard option, under Keyboards in General settings.
It can be flipped around flat so it can sit on a music stand. The keys are exposed, but not active. It does not, however, support the viewing mode where you could have it stand on its own with the keyboard hidden. Only the non-keyboard folio supports that.
All monitors screens are mesured diagonally. So top left corner of the screen to bottom right corner.
