To upgrade to OS X 10.6 Snow Leopard only 1 GB memory is required however 2GB are recommended. What is the down side of only having 1 GB memory?

Then your Mac would be really slow because the Snow Leopard uses a bunch of RAM for performance. And Snow Leopard uses 64-bit technology, which 'eats' more memory.
(I find that 4GB suits me the best)
