AppleTV has Bluetooth audio out so you can receive audio from your AppleTV to Powerbeats Pro. You can only connect one set of headphones and there will be no audio sent to your TV when you connect the PowerBeats.

You can connect them via the settings/remotes and devices/Bluetooth or by swiping down while playing a video in order to bring up the subtitle and audio options. You can also hold down the play/pause button prior to opening an app and select them from there.

While they are water and sweat resistant, they aren't waterproof and liquid damage isn't covered under warranty so I wouldn't recommend it

Yes, they will perform well, with the new H1 chip, latency will be quite low for video Streaming.

I have Powerbeats 3 Wireless and I wear them in the dry sauna all the time. My Powerbeats 2's and 3's still work. I've never worn them in a steam room though. Steam is smalller than water droplets, and you don't want that getting inside of your tech. I wouldn't. It's like wearing them in the shower. They are water resistant, not waterproof...

This would be very subjective from person to person, ear size, and sleeping position. A big factor may be the earhook design. Try using Powerbeats3 Wireless which share a similar ear hook design (granted they are 23% bigger and 17% heavier than the pros) but try sleeping with them to see if the ear hooks themselves will work with your sleeping style.
