What's the difference between a Thunderbolt 3 cable and a USB-C cable?
Are they different in any way, or completely interchangeable?

Think of USB-C as the physical connector; there are different standards for data transfer. Most USB-C cables are up to 5 or 10 Gbps but Thunderbolt 3 is up to 40Gbps. However, Thunderbolt 3 cables have some limitations for charging your Mac.
Therefore, I would use the supplied USB-C cable for charging your Mac, and a Thunderbolt 3 cable between your Mac and other Thunderbolt 3 devices, if required.
