When in the office, I do not use the laptop display. Instead I use 2 large monitors. How would I connect a MAcBook Pro to this set up?

Google "My MacBook Pro Goes Multimonitor: 4 Monitors At Once!".
It's an in-depth article on how to do this.
Basically you need a USB hub and 2 DVI/VGA to usb adaptors.
