They do not turn off in your pocket. I leave my case at home most days as it’s too big for my pant pocket. When i take them out of my ears and place into my shirt pocket i notice the headphones icon on my phone screen which means they are connected and the battery is running down. I can’t figure out how to turn them off so i lay them on ny desk at work. However i do forget to take with me when i leave for day at least once a week.
So unless they are in the hard case you can’t guarantee they will stay in sleep mode. If anyone has a suggestion, I’m all ears.

I have Powerbeats 3 Wireless and I wear them in the dry sauna all the time. My Powerbeats 2's and 3's still work. I've never worn them in a steam room though. Steam is smalller than water droplets, and you don't want that getting inside of your tech. I wouldn't. It's like wearing them in the shower. They are water resistant, not waterproof...
Based on what it says in the description, yes, you can use one ear or the other or both at the same time. Each headphone side has volume and track control. I would recommend checking to see if it is best for your phone to be in Mono-Audio mode, but it will likely take care of it for you when you are just using one, very similarly to the AirPods.
