Will this adapter allow a Mid-2011 iMac 27" to become a target display for a ThinkPad P50 (using the Type-C Thunderbolt 3 output)?

No. The iMac supports Target Display Mode via Mini DisplayPort only; this adapter is very specifically a Thunderbolt adapter, it does not support DisplayPort video (even though Thunderbolt normally does, this adapter does not). A USB-C to Mini DisplayPort Cable, supporting DisplayPort Alternate Mode, should do what you are describing (target display mode from the P50 to a 2011 iMac).
