How can I make a Spotlight search default to only documents?

Every time I search in Spotlight in the Finder I get an infuriating number of irrelevant returns - such as emails and images. Normally I only want documents, such as Word and/or .pdf. I can narrow the search by adding another criteria - but this is slow and repetitive. I want a default search that is limited to text (i.e, including .pdf, .doc, .docx, and .txt) documents, preferably to limited types of document that I can specify. A resort to Spotlight preferences is no use - for example, I can't globally disable email searches, because then search within Outlook is lost.
There must be a way to do this - Smart folder, Applescript?
