Depends on model identifier of your iMac. Go to Apple Menu --> "About This Mac" --> "More Info" --> "System Report".
Select "Hardware" at top of left pane. In right pane will be listed the "Model Identifier".
(Note: All versions of OS X after OS 10.6 require at least 2mb of memory).
The latest OS X compatible with each model is as follows:
iMac4,1 or iMac4,2 = OS 10.6 (Snow Leopard)
iMac5,1 / iMac5,2 / iMac6,1 = OS 10.7 (Lion)
iMac7,1 and later = OS 10.11 (El Capitan)
With OS 10.6.8 one has the App Store app installed. Through the App Store one can download and install OS 10.7, OS 10.8, or OS 10.11.
Note: OS 10.11 is free. If your iMac is compatible with OS 10.11, you can optionally go up to OS 10.7 or OS 10.8 instead.
(OS 10.7 and OS 10.8 requires one to purchase a redemption code first from the online Apple Store, which then gives instructions on how to download through the App Store app. OS 10.9 and OS 10.10 are no longer available, as any Mac that is supported by either of those two OS X versions, is also supported by OS 10.11.) OS 10.11 requires no purchase, just use App Store app to download and install.
Advice: When upgrading the OS X, install to a separate partition. That way if any printer or scanner drivers do not work, or any software does not work, you can always go back and start up with the partition with the older OS X. If you need instructions on how to do this, submit another question.
