certainly can, i use the extended keyboard both in bootcamp on a Macbook pro 17', as well as a custom built PC both running windows 7 x64 (and previously vista).
The drivers for the keyboard are contained in the bootcamp folder of the leopard install disc, or a simple google search will locate the same.
You will need to manually set the regional settings > keyboard to the correct settings from the control panel in windows once installed.
An alternative is the logitech dinovo keyboard, while its no where near as sexy, it does have a separate numerical keyboard (with media control) I purchased it purely for the numerical keypad, and use it both as a standalone calculator, and when useing the apple bluetooth keyboard (which is also sensational) or the laptop keyboard if I am doing alot of numerical input while on the road.
