I have a Power Mac G5 Dual core running 10.4.11, what OS can I go up to and is it stable on these Macs?

The last version of the Mac OS to support the PowerPC processor is OS 10.5 (Leopard). Beginning with OS 10.6 (Snow Leopard) you had to have a Mac with an Intel processor.
In my opinion, OS 10.4.11 is a very stable release.
If you do decide to upgrade to OS 10.5, it will be very difficult, if not impossible, to find it for sale.

The latest version you can run on a G5 is 10.5 (Leopard). It should work well on your machine.
