If the Pegasus itself dies, can the (hopefully good) drives be plopped into another Pegasus and work from where they left off?

That depends on the nature of the failure. I suspect if the Pegasus unit fails, you are in serious trouble, and should NOT depend on the internal drives. Numerous read / write errors, RAID integrity, or other anomalies one would expect with a controller failure would likely be present.
I backup my Pegasus using Carbon Copy Cloner with Incremental backups nightly to a Big USB Drive for this reason.
