Does the mini display port to HDMI adaptor send both sound and video to the HDMI port on my TV?

Yes the 'Airs' mini display port does handle both audio and video. However some adapters require the addition of a separate audio cable and others do not. The best advice is to check with each manufactures web site to make sure that the one you are interested in handles both the video and audio.
As mentioned earlier the HDMI standard requires the passing of both video and audio signals.
FYI I purchased a Belkin adapter which works very well, especially if you already have the HDMI cable.

You have probably found out by now, that you need to connect an audio cable to either your TV if your TVs HDMI inputs have it, or to a surround sound system using the headphone jack of your MAC.
Sorry to be answering so late, but I hate to see a question go unanswered or answered with a partially correct answer.
