Can I use two thunderbolt to Ethernet adapters on one MacBook Pro?

With the new adapter, the possibility of using a notebook as a server doesn't seem too far-fetched. Super fast and a built in battery backup? That's a server in my book!

Yes , you can connect 2 thunderbolt to ethernet adapters and create a bond through Network preferences .
Can't access the hardware section under "advance" (MTU , etc) yet LACP seems to work but not at double speed yet. Contacting support for Apple and Netgear (Switch) for further information
    so will keep you updated.
